Masterfully forged from professional-grade High-Carbon Steel, the Shinano Collection features individually forged kitchen knives that are built to last so that you never need another kitchen knife set again.
High-Carbon Steel, which was once the metal of choice of Japanese swordsmiths, has been exploding in popularity due to its added hardiness and sharpness, to such a degree that high-carbon steel has become the premier choice of many professional chefs.
Each knife is carefully heat-treated and sharpened to perfection for razor-sharp cutting and extreme durability. The knives are etched with a traditional Damascus pattern, paying homage to a style of knife-making whose history stretches back over 1000 years.
The knives boast a 15° edge for superior cutting, as compared to a typical 20-25° edge found in most Western knives. You WILL feel the difference from the very first cut.
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises. Just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15° (compared to the standard 20-25° of most Western knives), our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.

Step 1, Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.
That's it, no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Ok so got these as a gift for the wife whos getting into cooking. They’re alright, no major issues. The bread knife is actually brilliant, glides through sourdough no bother. But rest of the set just feels average. The steel is ok but after a few weeks theyre already needing a honing which is a bit dissapointing for something billed as military grade. The handles are comfy but honestly i think the red looks a bit cheap up close. Its not a bad set for the money but i think i expected a bit more given the reviews id seen. She uses the fruit knife most cause its tiny and cute, so theres that.
Bought this set for my birthday pressie to myself and overall quite happy. Came really quickly and the box was a proper nice presentation. The knives look the part with the damascus finish and all, and they’re proper sharp out the box. The red handle colour is a bit marmite—its grown on me but my missus thinks they’re a bit loud. My favourite’s the 7” santoku, use it for pretty much everything. Only minor thing is the boning knife feels a wee bit light, but it still did a decent job filleting some mackerel. For the price I’d say its a solid set.
Decent set for the price but nothing to write home about. Bought these to replace my old mishmash of supermarket knives. First impressions, the damascus pattern is nice and the red handles look smart, but they feel a bit lightweight which some might like but I prefer a heftier knife. The nakiri is the standout for me, great for veg, but the small santoku is a bit pointless, wouldnt miss it. The kiritsuke I've not used much, bit long for my small kitchen. Edge out the box was okay, not screaming sharp but fine. The handles are pretty but get a bit slippery when your hands are wet, which is most of the time in the kitchen. For the money it's a fair set, just dont expect miracles. Probably better for a beginner or someone upgrading from really cheap stuff.
Got this set for my husbands birthday and hes absolutely chuffed with it. The knives come in a lovely presentation box, really well packaged. The red handles are proper eye catching and feel great in the hand, not slippy at all. Hes been using the nakiri for all the veg prep and the santoku for general chopping, says they glide through everything. The bread knife is a bit unexpected quality for this price, cuts crusty loaves without squashing. The small fruit knife is handy for peeling. Honestly for £155 you get a cracking set that looks and performs way above what I expected. Only had them a couple weeks but edge is still razor sharp. Definitely recommend if you want a complete set that looks the business.
Really nice set overall, blades came razor sharp and the presentation box makes it a proper gift. Only thing is the kiritsuke knife is a bit heavier than I'd like for delicate work, but thats just personal preference. The santoku is my go-to now, perfect size. Handle material feels durable too, easy to grip. Wouldn’t mind a storage solution included though, but at this price I cant complain.
Got this as a birthday present for me mum and shes over the moon with them. The damascus pattern looks even better in real life and they slice through veg like butter. The nakiri is prob her favourite but she uses the bread knife nearly every morning. Honestly a brill set for the money, the red handles really stand out in the knife block (we bought one separate).
I've been using the petty knife for basically everything. It's the perfect size for my small cutting board. The set is well balanced, and I like that the bread knife has a proper scalloped edge, doesn't tear the bread. My mate saw them and ordered a set the next day.
These are a massive step up from the restaurant supply ones I had. The damascus pattern is etched properly, not just painted on. The handles are really comfortable for a pinch grip. I've only had them a fortnight but they're still razor sharp after daily use.
Brilliant set for the money. I was chopping herbs with the nakiri yesterday and it was a proper joy, none of the bruising I used to get. My only tiny quibble might be that the kiritsuke is a bit longer than I expected but I've got used to it. Really happy overall.
Got this set for my new flat and honestly cant fault it. The nakiri is a dream for veg prep, makes chopping onions so quick. The bread knife cuts through crusty loaves without squashing. Handles are comfy and look proper smart on the magnetic rack.
