Kagerou 8" Kiritsuke Knife 切り付け包丁
The Kagerou, named after the shimmering “heat haze” of midsummer, brings the grace of fine Japanese-inspired design to your own kitchen. Every detail of this 8-inch Kiritsuke is crafted to make you feel like a professional chef while you cook at home.
3-Layer AUS10 Steel Core
A high-performance AUS10 steel core is wrapped in three protective layers of stainless steel, combining superb hardness with lasting edge retention and corrosion resistance. Honed by hand to a mirror polish and sharpened to a precise 8–12° angle, the blade delivers scalpel-like precision that glides effortlessly through vegetables, meat, and fish.
Striking Hammered Finish
The dark, hand-hammered texture across the upper blade is as functional as it is beautiful. It breaks the surface tension between steel and ingredients so food releases cleanly, keeping every slice smooth and controlled.
Premium Olivewood Handle
Crafted from golden olivewood, the octagonal handle offers natural warmth and a subtle grain that makes each piece unique. Its ergonomic shaping and perfect balance give you a comfortable, secure grip for long prep sessions without fatigue.
Culinary Luxury, Every Day
Blending traditional hand-finishing with modern techniques, the Kagerou is built to exacting professional standards yet designed for the passionate home cook. It’s more than a kitchen knife—it’s a centerpiece of craftsmanship and a daily invitation to cook with confidence and artistry
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.

Sold OutA decent knife that’s versatile and sharp, though it requires regular sharpening to keep performing well.
The knife does the job, but the finish could be better.
Top-quality knife, an absolute pleasure to use
Worth every cent for this level of quality
A fantastic knife that combines sharpness with a comfortable grip, making meal prep easier.
This knife is exactly what I was looking for. It’s sharp, easy to handle, and seems built to last.
This knife combines elegance with exceptional performance.
I’m impressed with the sharpness and durability of this knife. It’s been a reliable tool for all my cooking needs.
This knife has a nice balance and sharpness. It’s been a reliable tool in my kitchen for all sorts of tasks. The blade is precise and handles a variety of tasks with ease, though it does require frequent sharpening to maintain its edge. The handle is well-designed and provides a secure grip, but I think it could be slightly more cushioned for better comfort during extended use. Overall, it’s a reliable knife that’s worth the investment, even if it does need a bit of upkeep.
This knife offers sharp, clean cuts and a stylish design that looks great in my kitchen.
This knife has made me fall in love with cooking all over again. It’s that good.
I can't imagine cooking without this knife now.
This knife has become my favorite kitchen tool.
This knife performs exactly as I hoped it would. It’s sharp, easy to handle, and has a nice weight to it. The blade is well-crafted and offers good precision, though it does require regular sharpening to stay in top condition. The handle is comfortable and provides a secure grip, but I think it could be slightly more ergonomic for better comfort during long cooking sessions. Despite these minor drawbacks, it’s a great knife that’s well worth the investment.
Three stars seems fair. It's good, not great. I expected more for the money. The edge is sharp but I've had to hone it more often than I thought I would. It's a good knife, just not a standout.
Been using this daily for a month now. It's my go-to for pretty much everything. The steel seems really good, haven't had to sharpen it yet. Makes cooking a lot more enjoyable.
Perfect weight for me, not too heavy not too light. The edge is ridiculously sharp, be careful! Used it to break down a whole chicken and it handled everything beautifully.
Really nice knife, super sharp. The handle shape is a bit different to what I'm used to, took a day or two to get comfortable with it. Still, cuts brilliantly.
The perfect knife for all my kitchen tasks
The best knife I've added to my collection in years.
Cant believe how good this is for the price. I've got a couple of much more expensive knives and this holds its own easily. The shape is great for chopping herbs.
Great knife for the money. Does everything I need it to. My only minor gripe is I wish it came in a 10 inch option as I've got big hands, but for most tasks the 8 inch is fine.
Bought this after my old santoku finally gave up. The kiritsuke tip is so useful for precise work. Feels really solid and well made.
Bought this for my dad and he loves it. He said it's a fantastic knife but mentioned the spine could be a bit more rounded for comfort during long chopping sessions. Still uses it every day though.
It's a decent knife. Sharp when it arrived. Does the job. Not sure it's worth the price jump from my old IKEA chef's knife to be honest. It's nice, but I wasn't blown away.
