Hakuba 白馬 8″ Damascus Steel Gyuto Chef Knife 牛刀
Introducing the Hakuba 白馬 by Shimeru, a premium 8″ gyuto knife that embodies strength, elegance, and masterful precision. Named after Japan's legendary "White Horse" mountain peaks, the Hakuba is forged for those who demand excellence in both form and function.
67-Layer Damascus Steel Precision At the core of the Hakuba lies a blade forged from 67 layers of premium Damascus steel with a VG10 cutting core, delivering exceptional sharpness, resilience, and edge retention. The mesmerising swirl pattern across the blade is unique to each knife, a hallmark of traditional Damascus craftsmanship. The hammered finish reduces surface friction, enabling seamless cuts through vegetables, proteins, and delicate ingredients alike.
Artisan Handle Craftsmanship The Hakuba's handle is a striking fusion of deep ocean-blue resin and natural lofidied wood, accented with an elegant brass mosaic pin. This bold combination creates a visual depth reminiscent of mountain forests meeting twilight skies. Beyond its beauty, the handle offers outstanding durability and moisture resistance, while the ergonomic shape provides a comfortable, secure grip that reduces fatigue during prolonged use.
Uncompromising Versatility With its perfectly balanced 8″ blade, the Hakuba gyuto excels across the full spectrum of kitchen tasks, from precision slicing and intricate dicing to confident chopping. The harmonious weight distribution ensures effortless control, making it equally suited to daily meal preparation and refined culinary creations.
Command Your Kitchen The Hakuba 白馬 8″ Damascus Steel Gyuto Chef Knife is more than an instrument—it is a declaration of intent. For chefs and home cooks who value artistry and performance in equal measure, the Hakuba will become the cornerstone of your kitchen, inspiring mastery with every cut.

This knife has a great feel to it. It’s well-balanced and sharp, making meal prep much easier and more enjoyable. The blade is precise and cuts through a variety of ingredients with ease, though I’ve noticed that it does require regular honing to keep its edge. The handle is comfortable, but I think it could be improved with a slightly more textured grip to prevent slipping. Despite these small issues, it’s a solid knife that I’m happy to have in my kitchen.
Impeccable quality and sharpness. A must-have for any chef.
I can't recommend this knife highly enough; it's exceptional.
I’m beyond impressed with how this knife performs. It’s easily the best I’ve ever owned.
This knife exceeded all my expectations. It’s not just sharp; it’s incredibly well-balanced and feels like an extension of my hand.
This knife is a pleasure to use, with sharpness and design that make every cut easy.
I’m very satisfied with this knife. It’s sharp, well-balanced, and makes food prep much easier.
This knife works well for general kitchen use. The blade is sharp, but it could hold its edge longer before needing maintenance.
The knife is sharp and performs well, though the handle could be more comfortable. Overall, a good addition to the kitchen.
The craftsmanship is simply outstanding
I received my knife within a few days, and it’s everything I hoped for. The sharpness is unbelievable.
Okay for light use, but not great for heavy-duty tasks.
Five stars! The blade is incredibly sharp and stays that way.
So sharp out of the box, I was a bit nervous using it at first! The handle is comfortable, no hotspots even after a big sunday roast prep.
Great value knife. Looks expensive and cuts great. Not sure the damascus does anything for performance but it looks cool. Slight preference for a darker handle colour but that's just aesthetics.
This knife is a masterpiece—sharp, durable, and beautiful.
I'm impressed with the durability and sharpness of this knife.
Chuffed with it overall. The VG10 core seems to hold an edge well. My only slight wish is that the handle was a touch thicker, but it's by no means uncomfortable.
Bought this as a treat for myself and it's brilliant. The weight is perfect, feels really balanced in the hand. Makes prepping dinner a joy instead of a chore.
This knife slices through meats and vegetables effortlessly, making prep work quick and easy.
Been using it daily for 3 weeks now and its still like new. Wipes clean easily and the edge is holding up really well. Top notch.
Does the job brilliantly. Holds an edge. My partner finds it perfect, I just find the handle shape a tiny bit awkward for my grip, but we both use it loads so can't be that bad!
Absolutely chuffed with this knife. The damascus pattern is stunning, and it glides through veg like its nothing. Been using it for a month and its still razor sharp.
Bought this as a gift for my dad and he loves it. He did say the balance point is slightly more towards the blade than he's used to, but he's adapted quickly. Cuts beautifully.
