Introducing the Hayama 葉山 by Shimeru, a premium 7″ santoku knife that draws inspiration from the lush, forested hillsides of Japan's coastal retreat. The Hayama combines striking visual depth with exceptional cutting performance, forged for chefs and home cooks who demand both beauty and precision.
The blade is forged from 67 layers of premium Damascus steel with a VG10 cutting core, delivering outstanding sharpness, durability, and edge retention. The intricate wave pattern across the blade is unique to each knife, a hallmark of traditional Damascus craftsmanship. The hammered tsuchime finish reduces friction and prevents food from clinging, ensuring clean, effortless cuts through vegetables, proteins, and delicate ingredients alike.
The handle is a captivating blend of smoky resin and natural burl wood, creating depth and movement reminiscent of forest shadows at twilight. A decorative mosaic pin adds a refined accent, while the ergonomic Western-style grip provides comfort and secure control. Moisture-resistant and built for durability, this handle is designed to perform in the busiest kitchens.
At 7″, the Hayama santoku excels at the three essential cuts—slicing, dicing, and mincing. Its wide blade profile allows for easy scooping and transfer of ingredients, while the balanced weight provides agile, confident handling for both everyday meals and ambitious culinary projects.
The Hayama 葉山 7″ Damascus Steel Santoku Japanese Chef Knife is crafted for those who appreciate artistry and performance in equal measure. A blade that brings depth, precision, and quiet elegance to your kitchen, the Hayama will inspire creativity with every cut.

Step 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Got this as a gift for my brother, he loves it. From what I saw the quality is top notch. Only thing stopping 5 stars is I wish the box was a bit more presentable for gifting—it’s fine but plain. The knife itself is spot on.
Been looking for a decent santoku for ages and this one fits the bill perfectly. I’ve got fairly small hands and the handle is just right. The blade is solid and holds its edge far better than my previous IKEA cheapie. Great value.
It’s an okay knife. Sharp enough out the box but didn’t blow me away honestly. The damascus pattern is nice but the handle feels a bit cheap for £65. I expected a bit more from the hype. It cuts well but I’ve got a cheaper santoku that does a similar job. It’s decent, just not amazing.
Ok so this knife has become my go to in the kitchen, i reach for it over all my others. The balance is perfect and the handle is super comfortable. Even my husband whos rubbish with knives finds it easy to use. Definitely a keeper.
Solid knife, slices like a dream and looks the part. The reason for 4 stars is I wish they included a blade guard or saya at this price point, just for safe storage. That aside, the knife is brilliant.
Ok so i’ve been using this for about a month now and it’s still so sharp. The VG10 steel is no joke. I cook loads and this knife feels like a proper tool, not a toy. Highly recommend if you want something that lasts.
I wanted a decent knife that wouldn’t break the bank and this is it. It’s an absolute steal for £65. The Damascus cladding is beautiful and the VG10 core is the real deal. I’ve chopped everything from butternut squash to delicate herbs and it handles all with ease.
Upgraded from my old Robert Welch santoku and the difference is night and day. The Hayama slices through carrots like butter, and the food release is brilliant thanks to that hammered finish. Really pleased.
Came next day in a lovely box, well packaged. The knife itself is a work of art. I just leave it out on the chopping board now cos it looks so good. Sharpness is excellent, definitely better than any supermarket knife I’ve had.
Got this knife after my mate recommended it and I can see why. It’s sharp enough to slice a tomato paper thin without any effort. The hammered texture actually does help with sticky stuff like potatoes. Winner.
