Kinzan 金山 7.7″ Damascus Steel Gyuto Japanese Chef Knife 牛刀
Introducing the Kinzan 金山 by Shimeru, a premium 7.7″ gyuto knife that celebrates the timeless beauty of traditional Japanese craftsmanship. Named after the "Golden Mountain," the Kinzan radiates warmth and refinement, offering exceptional cutting performance in a blade destined to become a treasured kitchen heirloom.
67-Layer Damascus Steel Brilliance The Kinzan's blade is meticulously forged from 67 layers of premium Damascus steel, encasing a VG10 core celebrated for its outstanding sharpness and edge retention. The intricate flowing pattern across the blade surface tells the story of expert forging, while the hammered tsuchime finish reduces friction and prevents food from clinging to the steel. Every cut is precise, effortless, and controlled.
Elegant Rosewood and Amber Handle The handle is a showcase of natural sophistication, crafted from rich, deep-grained rosewood that exudes classic elegance. A luminous amber resin spacer adds a touch of warmth and distinction, complemented by polished steel accents that frame the design beautifully. The octagonal profile provides a secure, comfortable grip, allowing for confident control and reduced hand fatigue during extended culinary sessions.
Agile Precision At 7.7″, the Kinzan offers a nimble yet capable blade length, perfectly suited for chefs who appreciate agility without sacrificing versatility. From delicate herb chiffonades to swift vegetable prep and precision protein work, the Kinzan responds to every movement with grace and accuracy.
Timeless Craftsmanship The Kinzan 金山 7.7″ Damascus Steel Gyuto Japanese Chef Knife is a celebration of heritage and artistry. For those who seek a knife that honours tradition while delivering modern performance, the Kinzan will bring warmth, precision, and inspiration to your kitchen for years to come.

The blade is precise and handles a variety of tasks with ease, though it does require frequent sharpening to maintain its edge. The handle is well-designed and provides a secure grip, but I think it could be slightly more cushioned for better comfort during extended use. Overall, it’s a reliable knife that’s worth the investment, even if it does need a bit of upkeep.
The knife’s design and sharpness make it a great tool for both professional and home cooks.
A sharp and beautifully crafted knife that makes cooking more enjoyable.
It works fine, but I expected better quality for the price.

The blade is great for all sorts of tasks, from slicing vegetables to cutting through meat, though it does need regular sharpening to maintain its performance. The handle is comfortable, but I think it could benefit from a slightly more ergonomic design for better long-term use. Despite these minor issues, it’s a great knife that’s become an essential tool in my kitchen.

The knife is fine, but it doesn’t hold its edge well.
Does the job really well, looks the part. I just find the blade a bit too curved for my chopping style, I'm more of a push-cutter. But it's a quality bit of kit.
Birthday present for the wife and she loves it. She does most of the cooking and says it's made prep work much quicker. The damascus finish is really pretty.

This knife offers excellent value. It’s sharp, well-made, and does exactly what I need it to do in the kitchen.
It's good, not great. The handle finish feels a bit plain for the price, and while it's sharp, I've used cheaper knives that perform similarly. It's a solid three star - does the job but nothing special.
Arrived next day which was a bonus. Knife itself is great, feels really well made and substantial. Used it to break down a whole chicken and it handled everything from the joints to slicing the breast easily.
Used it to thinly slice beef for a stir fry last night, worked a treat. The blade is so thin behind the edge it just parts the meat. Handle is a nice dark wood, feels secure.
Impressed with the sharpness and the finish is lovely. The handle shape is fine, but I think I personally prefer a wa handle over this western style. That's just me though, it's a great knife.
I've got a few Japanese knives now and this is my go-to gyuto. The edge retention is impressive, still shaving sharp after a month of home use. Lovely piece of kit.
The knife cuts well, but the handle is too slippery.
Very good knife, cuts beautifully. It's a bit heavier than I expected from a Japanese knife, but actually I think I prefer the heft now for chopping through harder veg. Still a four star from me.
