Step 1, Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.
That's it, no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Precision.
Balance.
Craft.

Ruri 8.5" Damascus Steel Gyuto Knife 牛刀
Shimeru presents the Ruri 琲璃 Damascus Steel Gyuto, named for the deep azure of lapis lazuli long treasured in Japan. Hand-forged from 67 layers of premium Damascus steel, this 8.5″ chef’s knife is made for cooks who want exceptional performance wrapped in striking design.
Exquisite Damascus Craftsmanship
Each blade is forged with meticulous care, creating a flowing Damascus pattern that is as functional as it is beautiful. The layered steel reaches an HRC hardness of 62–64, giving a razor-sharp edge that holds through countless preparations. Perfectly balanced and hand-finished, it glides through meat, vegetables and fish with effortless precision.
Blue Resin & Solidified-Wood Handle
The handle fuses vibrant blue resin with stabilised natural wood, each one a one-of-a-kind pattern of swirling colour and warm grain. The smooth, ergonomic shape offers a secure, comfortable grip and excellent control, reducing fatigue through long sessions at the board.
A Chef’s Essential
At 8.5″, the gyuto is the ultimate all-purpose blade, ideal for slicing, dicing and chopping. From delicate garnish work to breaking down larger cuts, the Ruri delivers professional performance with grace and style.

Does the job well enough, edges come up nice and keen after a couple of goes. Only thing is the handle shape took a while to get used to, bit chunkier than what I'm used to, and I wish it were a touch longer for my bigger blades. That said its solidly made and I'd still recommend.
Got this to keep my Japanese knives in shape and honestly it's spot on. The resin handle feels lovely in the hand and the rod itself is nicely weighted. A few quick passes on my chef's knife and its back to shaving sharp, even my old Victorinox perked up no end. Came in a nice box too which was a bonus.
Got this for my husband's birthday, he's been using it non stop. Lovely weight to it and the resin handle looks proper smart. The handle shape was a bit of an adjustment at first, he said it felt slightly chunky but now he's used to it he's happy. Cuts through veg like butter. Would recommend.
So I've been using the Ruri daily for about 3 weeks now. Build quality is solid, the damascus pattern is really striking and the edge is still holding up well from the box. My only gripe is the 8.5 inch length, I sometimes wish it was a touch longer for larger prep jobs but that's just me. Handles a whole chicken and root veg with ease. Massive upgrade from my old supermarket set. Came well packaged too. If you're on the fence, just get it.
