Chitose 7" Nakiri Knife 菜切り包丁
The Chitose 7" Nakiri Knife delivers the precision and balance of professional Japanese-style cutlery, designed to make vegetable preparation effortless and elegant. Its broad blade and fine edge transform everyday chopping into a smooth, controlled experience.
AUS10 Steel Core
Forged from premium AUS10 steel, the blade combines impressive hardness with excellent edge retention. Honed to a razor-sharp cutting angle, it glides through everything from tender herbs to dense root vegetables. The hammered finish across the upper blade reduces drag and prevents food from sticking, ensuring each cut is clean and efficient.
Olive Wood Handle
The handle is crafted from golden olive wood, prized for its warm color and naturally intricate grain. Smooth and beautifully contoured, it offers a comfortable, balanced grip that remains secure even during long prep sessions. Its octagonal design provides both control and elegance for chefs and home cooks alike.
Effortless Cutting Performance
Perfectly weighted and thoughtfully balanced, the Chitose Nakiri allows for clean, precise cuts and easy scooping of prepared ingredients. Its wide blade and razor-sharp edge make it ideal for all types of vegetable work, from fine chiffonades to hearty slices.
A Statement of Culinary Craftsmanship
Combining modern AUS10 performance with the timeless beauty of olive wood, the Chitose 7" Nakiri Knife is more than a kitchen tool. It is a piece of functional art that elevates your cooking experience and brings both luxury and confidence to every meal.
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises. Just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15° (compared to the standard 20-25° of most Western knives), our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.
Not sure which knife?
Answer a few quick questions about how you cook, and we'll match you with the perfect blade.
Step 1, Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.
That's it, no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Really like this knife for prepping veg. The blade is dead sharp and slices through peppers and onions like butter. The hammered finish does help with food not sticking which is a nice touch. Only reason its not 5 stars is the handle feels a bit small for my hands, takes some getting used to but once you do its fine. Decent for the price, would recommend.
Its an ok knife. Sharp enough out the box but honestly expected a bit more for the money. Doesnt feel massively different to my old £20 santoku if im honest. Build quality seems fine but just not blown away. Will keep using it but probably wouldnt buy again.
really solid bit of kit for the price. the edge is quality and i like the hammered finish stops things sticking. only thing is the handle feels a bit chunky in my small hands, takes some getting used to but i still grab it over me old chef's knife now
got this for my wife whos the cook in the house and shes over the moon with it. the blade just sinks through carrots and spuds like theyre made of butter, its a joy to watch. came in a lovely box too which was a nice touch, proper present material
Bought this as a gift for my dad who loves a bit of Japanese steel. He said it feels lovely in the hand, really well made and scary sharp. Only thing he mentioned was it’s a bit heavier than his old nakiri, but he’s already got used to it after a few days. For the price you get a cracking knife. The AUS10 steel is a nice touch, keeps its edge ages. Would recommend.
So i bought this nakiri on a whim after seeing good reviews. Honestly its the best kitchen knife ive ever owned. The balance is spot on and it chops through a cabbage like butter. I do a lot of stir fries and this has made prep so much quicker. The hammered finish does actually help with food release, noticed it especially when dicing onions. Arrived next day, well packaged. My wife keeps nicking it for her veg prep now.
Really nice little knife for the money. I do a lot of veg prep and this has become my go-to, its just the right weight and the steel holds an edge well (AUS10 I think it is). Only tiny niggle is the handle shape, felt a bit blocky at first compared to my Tojiro but Im getting used to it. If they did a slightly longer version I'd probably grab that too.
Got this nakiri for my wife's birthday, she's been wanting one for ages. Used it yesterday to do a big batch of stir fry veg and honestly it was a joy. The flat blade makes chopping so much faster, no rocking, just straight up and down. The hammered finish really does help, hardly anything stuck to it even with spuds. Sharp as anything out the box, glides through carrots and celery. Came in a nice padded box too, proper presentation.
blade is lovely and sharp out the box, been using it for a fortnight mainly for onions and cabbage and it makes the job so much quicker. the steel holds its edge well, havent had to strop it yet. if im being picky its a touch heavier than my last nakiri but I actually prefer the weight now, feels more controlled. wish they did a 6 inch version for my smaller hands but I'll get used to it
got this as a pressie for my mum who does a lot of batch cooking and she's over the moon with it. used it at hers last weekend to prep a massive veg soup and blimey it just glides through carrots and spuds. the hammered finish isnt just for looks, things dont stick to it like my old santoku. feels proper quality for the price. only thing is the blade is a bit wider than shes used to but she's got the hang of it now
