Step 1, Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher, the harsh detergents and jostling will damage the edge and handle.
Step 2, Dry
Towel dry immediately. Don't leave it wet or in the sink, even stainless steel can develop spots if left damp.
Step 3, Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer, it dulls the edge and is a safety hazard.
That's it, no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
Precision.
Balance.
Craft.

Wakaba 8.5" Damascus Steel Gyuto Knife 牛刀
Shimeru presents the Wakaba 若葉 Damascus Steel Gyuto, named for the fresh green of early-summer leaves. Hand-forged from 67 layers of premium Damascus steel, this 8.5″ chef’s knife is made for cooks who want exceptional performance wrapped in striking design.
Exquisite Damascus Craftsmanship
Each blade is forged with meticulous care, creating a flowing Damascus pattern that is as functional as it is beautiful. The layered steel reaches an HRC hardness of 62–64, giving a razor-sharp edge that holds through countless preparations. Perfectly balanced and hand-finished, it glides through meat, vegetables and fish with effortless precision.
Green Resin & Solidified-Wood Handle
The handle fuses vivid green resin with stabilised natural wood, each one a one-of-a-kind pattern of swirling colour and warm grain. The smooth, ergonomic shape offers a secure, comfortable grip and excellent control, reducing fatigue through long sessions at the board.
A Chef’s Essential
At 8.5″, the gyuto is the ultimate all-purpose blade, ideal for slicing, dicing and chopping. From delicate garnish work to breaking down larger cuts, the Wakaba delivers professional performance with grace and style.

Got this for me husband's birthday, he's well chuffed. The damascus pattern is gorgeous and it came razor sharp, sliced through a ripe tomato no bother. Handle feels solid, nice weight to it. Delivery was quick too, no complaints.
Been using this gyuto daily for about 3 weeks now and its proper good. From breaking down a chicken to finely slicing onions for a curry, it does the lot. The blade holds its edge really well, only needed a couple of passes on a steel so far. The resin handle is comfy even after a long prep session, and the wood grain looks lovely. Slightly heavier than my old santoku but I actually prefer it now. Arrived next day in a nice box, would make a decent gift.
Bought this to sharpen up my old set after the missus kept complaining about the veg knife. The handle feels really nice in the hand, solid but not too heavy. Took a couple goes to get the angle right but once I did, my blades were slicing through tomatoes like nothing. Build quality is proper for the price, the resin handle has a lovely finish. Came well packaged too, no complaints.
It's decent enough but didnt blow me away. Does the job sharpening my knives but found it a bit tricky to keep a consistent angle. The handle is comfortable, but for £80 I was expecting something a bit more substantial. Its not bad, just feels like a mid range tool that should probably be £50.
