Masterfully forged from professional-grade High-Carbon Steel, the Kitakami Collection features individually forged kitchen knives that are built to last so that you never need another kitchen knife set again.
High-Carbon Steel, which was once the metal of choice of Japanese swordsmiths, has been exploding in popularity due to its added hardiness and sharpness, to such a degree that high-carbon steel has become the premier choice of many professional chefs.
Each Kitakami knife is carefully heat-treated and sharpened to perfection for razor-sharp cutting and extreme durability. The knives are etched with a traditional Damascus pattern, paying homage to a style of knife-making whose history stretches back over 1000 years.
The knives boast a 15° edge for superior cutting, as compared to a typical 20-25° edge found in most Western knives. You WILL feel the difference from the very first cut.
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises—just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15°—compared to the standard 20-25° of most Western knives—our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.

Step 1 — Rinse
Warm water and mild soap after each use. Never put your knife in the dishwasher — the harsh detergents and jostling will damage the edge and handle.
Step 2 — Dry
Towel dry immediately. Don't leave it wet or in the sink — even stainless steel can develop spots if left damp.
Step 3 — Store
Use a knife block, magnetic strip, or blade guard. Never toss it loose in a drawer — it dulls the edge and is a safety hazard.
That's it — no special maintenance, no fussy rituals. Your Shimeru knife is designed for daily use. With these three steps it'll stay razor-sharp for years.
ive been using these daily for a few weeks. the petty knife is a little ripper for small tasks like peeling ginger, really handy. the set covers all the bases. my only slight criticism is the edge retention is okay but not amazing, i feel like i need to hone the santoku more often than id like. but a quick hone sorts it right out. for the price i think its fair. would buy again
been cooking for 30 years and these are a solid set for the money. the blades hold an edge well and the damascus pattern is really pretty. the handles are a bit smooth for my liking, could do with a bit more texture when your hands are wet. but i just grip a bit tighter and its no problem. the kiritsuke is a lovely knife, havent seen one in a set before. happy with the purchase
solid set, no complaints really. the damascus pattern makes them look premium. i do think the knife block is a bit bulky for my small kitchen but the knives themselves are great. i use the santoku the most, its got a nice weight. my missus prefers the nakiri. only took off a star because i wish theyd make this set with black handles as an option, the green marble is unique but not for everyone. still happy
absolutely chuffed with these knives. used the bread knife yesterday and it sliced through a crusty sourdough like butter. the whole set looks stunning on the counter, that marble green handle is really something. proper sharp out the box too. bargain for 140 quid
my old kitchen devils set had seen better days so took a punt on these. what a difference. the damascus pattern looks even nicer in person, proper head turner when mates come over. i use the 7" santoku most days, its become my go-to for pretty much everything. the filleting knife is a treat for fish, got a lovely flex to it. only used the petty knife a couple times but its handy for smaller bits. honestly for 140 pounds youd be hard pressed to find a set that looks and feels this good. my girlfriend reckons theyre too nice to use but i tell her theyre meant to be used
good set overall. you cant beat the price for damascus steel and i think they look great. my only complaint is theyre a touch heavier than what im used to, took a few days to get comfortable with them. once i adjusted i was fine though. the bread knife is a standout, really good. i use the nakiri most, its a good size. would recommend
ordered these on a tuesday, was on my doorstep wednesday. brilliant service. the knives themselves are class, the damascus pattern is beautiful. used the nakiri for a stir fry and it sliced through veg effortlessly. handles feel solid, good grip. over the moon with this purchase
got this set for me mums birthday and shes over the moon. she loves the look of the handles, says they feel comfortable. she especially likes the nakiri for chopping veg, says it makes quick work of cabbage. the block they come in is tidy, fits on her counter nicely. all arrived next day as well which was a bonus
nice knives, they arrived well packaged and look sharp. the green marble handles are even nicer in person, not over the top. my biggest gripe is the weight - i prefer a lighter knife, my wrist gets tired if im chopping loads of veg. my husband thinks theyre perfect though. so maybe its just me. the nakiri is brilliant for veg, makes such thin slices. 4 stars from me
bought this as a housewarming gift for my sister and her partner. they absolutely love it, already planning a dinner party just to use them. the presentation box it comes in is quite nice, makes it feel like a proper present. my sister said the nakiri is her favourite, been using it for all her veg prep
